Many people would agree that one of the most perplexing and frustrating mysteries in the world today is how to make a satisfying lunch for a vegan. We are going to solve that mystery and end the frustration right now, because I am going to show you how to make a quick, delicious lunch for a vegan or vegetarian.
There is a company called Turtle Island Foods. Turtle Island Foods is the company that brought us the tofu turkey - the one that they call "Tofurky". I know what you’re thinking, nobody likes tofu turkeys, especially vegans. I don’t care how much you’re bastin’ it I’m not tastin’ it. We must not hold the tofu turkey against this company - Turtle Island Foods - if they had not taken a chance and first created the tofu turkey, they never would have taken it to the next step. What they did was torque the tofu turkey into something really special: the Certified Vegan Tofurky Deli Slice. I’m talking a whole line of deli slices.
Here’s what you need to do. Go to the natural foods store. Look in the section where they have the cheese and butter; that’s where you will find the vegetarian cold cuts. There will be several different varieties of Tofurky Deli Slices to choose from. I like to mix and match a couple of different varieties in one sandwich. Today we have the Peppered Tofurky deli slice, and you can visibly see and taste the pieces of Black Pepper in it and we have the Hickory Smoked Tofurky deli slice.
Now you need bread. So go to the freezer section and pick up something by French Meadow Bakery either their Sunflower and Flax bread or their Summer Bread. If you cannot find something by French Meadow, then get something by Food for Life. You can get their Ezekiel sliced bread or their hot dog and hamburger buns. Both companies make a hearty, healthy product. The French Meadow bakery makes yeast-free breads and Food for Life makes breads with live sprouted grains.
I like my cold cuts not so cold, so what we will do is take some extra virgin olive oil and heat it in the pan just a little bit. Then we add the deli slices and slightly warm them up; it takes 1 or 2 minutes at the most. Let’s place the deli slices on the bread and pour whatever extra virgin olive oil is left in the pan right on top, it gives it a buttery flavor without the need for extra condiments. And it’s a non-genetically modified product.
Turtle Island Foods also makes a line of Tofurky sausages. My favorite is the Kielbasa because it’s not too spicy; just a little bit. Let’s use the Kielbasa sausage to make an Italian sausage and pepper grinder.
Fry the sausage in extra virgin olive oil and at the same time, heat up your favorite tomato sauce, lightly toast some Food for Life brand hot dog buns, then add a slice of vegan or vegetarian cheese and toast a little bit longer. Let me tell you something about this vegan rice cheese, it’s the newest product by Galaxy Foods, and it’s a big improvement over the soy vegan cheeses of the past, it melts great, it taste great, and it’s a non GMO [genetically modified] product. Oh, and don’t forget top that grinder with roasted red peppers, hmmm.
